Homemade pizza and a bowl of soup for dinner.

The pizza has just homegrown cherry tomatoes on it with fresh mozzarella and salt, olive oil, and basil — what they called a Caprese or Vittoria when I was in Sicily.

It’s a 48-hour sourdough crust I made.

I had a bunch of pics I couldn’t post yesterday, so I’ll share a few more today.

I went for a hike and saw these chonky bois on my drive home. Highland coos! No, not “cows.” They’re coos!

I couldn’t post this yesterday when things were borked here — but this was the from the place where I am housesitting. (Duncan, , on .)

I’ve been here over a month and this will likely be the sunrise I remember most. Just a moody, magnificent moment.

Trying new stuff. I have bad rosacea and have learned lately that wheat triggers it. So, I’m baking with spelt.

Last night I made tasty manchego spelt biscuits and baked some spelt sourdough bread. This morning, I finally tried the bread. If this is good for my skin, it’ll be a game changer. Very stoked.

Gotta tell the truth, I’ve been spending more time on Mastodon as I get to know it better.

Novice get too anxious about making . Chill, Winston.

Soup is about clearing out the fridge or freezer. If you know the process & you have the basics, you can always make a great soup.

Mirepoix is the onion/celery/carrot base — & you can chop extra to freeze for future soup-making simplicity.

Today, I used onions, carrots, leeks, garlic, a can each of diced tomatoes & white beans, pesto, a cheese rind, & stock for this.

It is my duty to let you know that the SS Edmund Fitzgerald sank 47 years ago, killing the entire crew.

This tragedy gave way to what is one of Canada's most endearing anthemic songs by our dearly beloved national treasure, the 83-year-old Gordon Lightfoot.

We use the saying “that takes the cake” when something is outrageous or exceptionally bad.

In the UK, it’s “takes the biscuit.”

And then there’s the whole “but when they say biscuit, they mean cookies” thing.

Language is weird.

SADNESS, I have to retire this Dr Oz meme now that he’s such a loooooooser.

Couple weeks ago, I made an 8-hour Bolognese. Pulled a bag out to make two individual baked spaghettis. I pulled the other one out 5 minutes early so I can reheat it perfectly on Thursday.

Huzzah!

: Always undercook the pasta by about 30% and add some pasta water to thin out your sauce. It will both absorb and evaporate as you bake it.

Rookie mistake in timing fail — but the steak is part of that. I’ve never had a steak contract as much and become as thick as this skirt steak did, so I did not rest it for as long as I should have.

And every time I think “meh, how much can it matter…” I’m reminded just how much it does matter to rest your steak well.

But it was pretty good. Some chimichurri, roasted potatoes, broccoli.

Some of us are STILL making sourdough. I just passed my third anniversary of baking with .

Finally got a good loaf out of my housesit kitchen. It’s hard to get the hang of it in a different environment but I’m stoked I got it right. Looking forward to breakfast.

This is 35% whole wheat.

You need sourdough starter but this recipe is amazeballs. She may have a yeast-only version on her site tho.

Pizza night! This is with three-day-old sourdough crust — so good.

Tonight’s toppings:

Ricotta, rosemary, white pepper, Maldon flake salt, leeks, pistachios, prosciutto, and mozzarella.

Achy shoulder, creaky bones -- wondering if the mainland's snowfall will come this way. It's too warm currently for snow, but who knows what the night portends.

This human-barometer thing is wearing thin, I tell ya.

It will be clear and cold this week in the Pacific Northwest, which will be beautiful — but it returns us to drought weather. We have not got nearly enough rain for rainy season and now will have a couple weeks of sunshine coming up. It’s nice to experience but terrible for potentially keeping us on the edge of drought.

Meanwhile, my eastern friends were aghast at their heat wave this weekend.
