Homemade pizza and a bowl of soup for dinner.
The pizza has just homegrown cherry tomatoes on it with fresh mozzarella and salt, olive oil, and basil — what they called a Caprese or Vittoria when I was in Sicily.
It’s a 48-hour sourdough crust I made.
I had a bunch of pics I couldn’t post yesterday, so I’ll share a few more today.

Trying new stuff. I have bad rosacea and have learned lately that wheat triggers it. So, I’m baking with spelt.
Last night I made tasty manchego spelt biscuits and baked some spelt sourdough bread. This morning, I finally tried the bread. If this is good for my skin, it’ll be a game changer. Very stoked. #bread #baking

Novice #cooks get too anxious about making #soup. Chill, Winston.
Soup is about clearing out the fridge or freezer. If you know the process & you have the basics, you can always make a great soup.
Mirepoix is the onion/celery/carrot base — & you can chop extra to freeze for future soup-making simplicity.
Today, I used onions, carrots, leeks, garlic, a can each of diced tomatoes & white beans, pesto, a cheese rind, & stock for this.
Couple weeks ago, I made an 8-hour Bolognese. Pulled a bag out to make two individual baked spaghettis. I pulled the other one out 5 minutes early so I can reheat it perfectly on Thursday.

#CookingTips: Always undercook the pasta by about 30% and add some pasta water to thin out your sauce. It will both absorb and evaporate as you bake it. #pasta #cooking #slowfood
Rookie mistake in timing fail — but the steak is part of that. I’ve never had a steak contract as much and become as thick as this skirt steak did, so I did not rest it for as long as I should have.
And every time I think “meh, how much can it matter…” I’m reminded just how much it does matter to rest your steak well.
But it was pretty good. Some chimichurri, roasted potatoes, broccoli.
Some of us are STILL making sourdough. I just passed my third anniversary of baking with #sourdough.
Finally got a good loaf out of my housesit kitchen. It’s hard to get the hang of it in a different environment but I’m stoked I got it right. Looking forward to breakfast.

Back when I was playing nomad for a few years, I stayed in great places. I had just started a 3-week stay in a small town calls Cesky Krumlov in the Czech Republic six years ago this week. It was a moody beautiful little town that swarmed with daytrippers until 5 then emptied out for the evenings until noon.
Don’t just day trip. Stay the night in such places. It changes when everyone gets back on the tour bus.
If you don’t have tortilla chips but you have corn or flour tortillas, you can slice them into strips like I did. Spray with oil, sprinkle with salt, and throw them in an air fryer at 390 for about 5 minutes to get them crispy. Get ‘em extra crisp so they stand up to the soup. #CoSoRecipes #CoSoFood
Made an easy soup — sort of; I made the enchilada sauce myself & cooked chicken, but you can buy a can of enchilada sauce & roasted chicken to make it quickly.
Sauté your veggies — I got onions, leek, carrots, celery, and garlic — and add enchilada sauce, stock, chicken, and corn. Simmer until happy. Season well with salt.
You can complicate it with more stuff like Mexican oregano, bay leaves, etc. but basic is good.
Garnish with tortilla chips, avocado, green onions. Bonus points for lime.
