Random question - does anyone else make a weekly menu? I find that it helps immensely because it cuts down on extra trips to the store, helps me use up the fresh produce I have on hand, and gets me to be more creative. Thoughts from others?

I did more this weekend than I normally do, and I think it's really going to help.

I modified my overnight oats recipe and removed the shredded coconut and the coconut milk, and this week used fresh blueberries because I had them.

I was sharing with one of my work friends about my breakfast routine these days and figured I would also share with you lovely people. I've been making overnight oats using 1/2 rolled oats, 1Tbsp chia seeds, 1Tbsp unsweetened shredded coconut, 1/4C dried fruit [usually raisins or cherries], cinnamon, and 1C milk. I've been using unsweetened coconut milk but you could use anything really. It's healthy, it's filling, and I can make a batch on Sunday for the whole week.

2. tomorrow is my regularly scheduled monthly Friday off and J and I are going to start transforming the "guest room" into the "cat suite"
3. we made a very tasty and very healthy dinner last night of air fryer salmon with curry honey mustard, quinoa with peas, and zucchini and onions sautéed with a curry spice blend

A visual summary of my weekend. The pulled pork sandwiches were stupid easy - pork shoulder and 2 cans of root beer in a slow cooker for 6 hours and then doused with BBQ sauce for service, served with homemade fridge dill pickles. The wire flower is madd with random beads, wire, etc. The vase is an empty DiSaronno Amaretto bottle decorated with alcohol ink. The purple is the Meadow Lace Shrug. The jewelry happened this morning.

Jason tried to kill me by putting jalapenos in our red lentils and paneer tonight so I'm recovering with some after dinner tea

Breakfast Berry Porridge
• 1C steel cut oats
• 1C quinoa
• 1/2C chia seeds
• 1/2C unsweetened dried coconut
• 1C fresh blueberries
• 1 lemon – zested and juiced
• 1 Tbsp cardamom
• 1 Tbsp minced fresh ginger
• 6C milk – any
Bring all ingredients to a boil then reduce to a simmer and cook for 20 minutes, covered, stirring frequently. Remove from the heat and allow to cool, still covered, for another 20 minutes. Transfer to individual serving containers and store in the refrigerator.

Jason made slow cooker beef ramen tonight, one of my favorites 😁

Not very good looking but very good tasting. This is steel cut oats, quinoa, and chia seeds cooked with coconut milk, a little water, and blueberries. I add some honey, cinnamon, and lemon juice. Breakfast for the week.

We had a "bonus" meatless dinner tonight - Tex Mex black bean lasagna

Got this recipe from my mom, going to try it this weekend:
Beef & Noodles
• 2 lbs stew meat
• 1 can cream of mushroom soup
• 1 packet Lipton Beefy Onion soup mix
• 1 packet brown gravy mix
• 24oz bag Reames frozen egg noodles
Place meat in a 9x13 pan. Mix other ingredients and pour over beef. Cover pan with foil and bake at 300 degrees for 3 hours. Serve over noodles
