First attempt making maki sushi. Well, the second roll was an unintentional futomaki, I suppose.
It's a quasi-California roll. I did a quick pickle on cucumber and carrot, and overnight pickle on the ginger. That kewpie mayo really is a secret weapon.

Upgraded the main storage in my Sound Devices 788T-SSD recorder today. The drive it came with from the previous owner was a refurbished 128GB Samsung 830, installed November of 2014. Best practice recommendation from Sound Devices is to replace these drives every 4 years or so, so this was long overdue.
I replaced it with a 480 GB Crucial BX500 3D NAND, which only cost me $38.
This gave me another opportunity to admire the beautiful internal design. What a tank.
I forgot to add done pics. This was flipping delicious. I held it a little over 180° for a couple hours, because I wanted to slice it rather than pull it.
I need a Carolina vinegar style sauce for the meat, and a compound sage cinnamon brown sugar butter for the sweet potato. Bok choy picked from my garden today sauteed in garlic chili oil.

This will be a first for me. Doing my usual snake/fuse method on my Weber kettle with pecan wood. Salt & pepper rub only; letting the smoke provide the flavor.
Sides will be sweet potatoes hasselback style basted with cinnamon brown sugar sage butter, along with garlic and chili oil sauteed bok choy from the garden.
