PDX has a food cart culture that has evolved into multi vendor buildings with multiple dining options under a common roof. The best of these is The Zipper and their szechuan fusion spot Basilisk has a fried chicken sandwich that is legendary, but my favorite are the Dan Dan Fries!

There's a few places here that have birria ramen, which I love.
I'm also a fan of the Brazilian pizza place.
But my favorite local cross-cultural dishes are:
A Chinese-Mexican place that does a chorizo fried rice.
The "Kimchi fries" that are curry-dusted fries topped with topped with pork belly or tofu, kimchi, cilantro, pickled jalapeรฑos, spicy mayo, and an over easy egg
