Lordy 8 hours of slow cooker. I suppose you'd have soaked them first? I would do a parboil and let them soak in the hot water overnight, I've had that happen years ago but that's why I always pressure cooker now. I don't have to think about it a day ahead. Dry unsoaked pintos in a pressure cooker are 45 minutes. (8 hrs would turn them into bean sauce π)

I've never used the new fancy instapot things but I have a good friend that swears by it and cooks nearly everything in it. I have a standard old school pressure cooker, and I also have a "air fryer" (which is really just a convection oven, but that's what they're calling them now, and you had to wear it onions in your belt to use it, because that's the way we done it. π)

This is the way. And I'd go six to eight. But I'm a big fan of pressure cooking beans. For a rack of ribs. I'm going to guess 30 minutes to 45? Enough to get them broken down, then several hours of 225Β° while wrapped, then open them up and get some grill marks and bark on the edges over the coals. YMMV
