Sweet Vidalia onion baked with butter, garlic, bacon, and smokey chipotle bullion. Then the toast fingers has smoked cheddar on it melted yum under the broiler.

@Kurtroedeger @stueytheround one night i was uninspired about cooking dinner & then remember Jon Townsend had recently done one of his early cooking show & made baked onion. so we had baked onion a la 1700s. they were good

My dad used to like to eat green onions we grew, straight-up, raw, dipped in a little salt. It was his idea of a side dish, and that was too onion-y for me. But a baked vidalia onion looks delicioius!

@Kurtroedeger You know how they have "lazy cabbage rolls" and it's all the ingredients that go in them, but it's all thrown in a pot and they're not individual rolls? Well that sounds like an elevated (fancier) 'lazy french onion soup' 🙂

The sweet onion is not as strong a flavor as most onions, and then baked like that brings it down a ton. You definitely know you're eating onion, but it's not overpowering and melds with the other flavors.

That's easy to omit.

Recipe for the above ^^^^
Peel a sweet onion, chop the top and bottom off so it's flat. Core out a divot in the middle and stuff a table spoon of butter and a teaspoon or so of better than bullion paste in it. Seal in foil and bake at 350heathen for an hour and half.
I made a little extra broth on the side to add to the bowl then.
So yum. So easy.
The onion cuts with a spoon then, so tender. And the cheesy toast adds a ton, dipping it in there for the bread to soak up more broth. 🤤🤤🤤🤤🤤🤤🤤🤤🤤🤤🤤🤤
