@holon42 It adds a savoury depth. You only need a little. I'll add maybe a teaspoon (15ml/5g) to this recipe. Cocoa and chillies are born to be together.

I usually add a little cocoa, too. It works really well with the earthiness of beans and chiles.

And chocolate and chiles are a traditional Mexican combination. Think mole negro--which I use as an inspiration for my chili.

which types of beans do you use?

@holon42 Haricots, kidney beans, chickpeas and red lentils. Then there's carrots, sweet potato, bell peppers, onions, mushrooms and tomatoes plus the herbs and spices and vegetable stock.
