How do you cook yours?

I bake mine breast down for the first 2/3 time, then flip it to let the skin brown on top the last 1/3. White meat is very juicy.

@MelissaHDavis Never thought about flipping it. I cover it with loose foil after it starts to brown. Might give your idea a try!

@MelissaHDavis I cook breast up but run seasoned butter under the breast skin to keep it moist. I may try your way for a change - not sure how easy it will be to flip an 18lb bird

@Anton @MelissaHDavis I cook mine breast down at 450F for the first half hour, then flip and reduce heat for the next 3 hous or so. No basting. Comes out perfectly moist every time.

@MelissaHDavis Spatchcock. Cut out the spine, flatten it, cooks in about 2ish hours with the breast as fully cooked as the wings and legs. No burning and since the cook time is shorter it stays juicy without basting
