1. Make white sauce aka bechamel
2. Slice sweet potatoes thinly, a mandolin is your friend
3. Some shredded cheese of your choice
4. Pan, sprayed with Pam; layer sauce, potatoes, cheese, sauce, potatoes, cheese… till you run out end with sauce/cheese
5. Bake covered 375 x 60 min
6. Take cover off. Bake 30 min more
