Just made a quick white bean spread and had it with sourdough toast.
1 can cannellini beans, drained
1/2 teaspoon Penzy's Parisien herbs
1 tsp olive oil
1 TBS dijon
(I didn't actually measure any of these ingredients, so start with a little and adjust to taste.)
Mash with a fork, until about half the beans are mush. Stir. Warm in microwave. Taste. Adjust.
The same ingredients would make a great salad if you didn't mash it and added a little vinegar.

Having a stock of canned beans helps me keep my diet healthy. So easy to open a can and make it into a meal.
