I got an ear of corn in my veg box. One!
Weather is horrible so **not** firing up the grill for one ear of corn π€£
Any tips #cosocooks ?
OK. I honestly didn't read this before posting my own!
I make a black bean and corn salad several times in the summer.
@stueytheround soup where you add the corn but it's not a side dish. π
@stueytheround 1 ear was good enough for Van Gogh ya snob π€ͺπ€£

@stueytheround Do you have an instant pot or an air fryer? They both work well! with very little effort and the corn comes out great!
@mistressticia I'm thinking airfryer using @Evvie's butter under the husk trick.
Thanks everyone!
@stueytheround I microwave it in a parchment pocket like a heathen
@sheseala I could think of worse!
@stueytheround
If you got a gas stove, strip it, roll it back and forth over the burner to get some char, like scorching green chilies. πΆοΈπ½
@FireMonkey Top tip!
To cook corn-on-the-cob: cut off both ends, leave the husk on (maybe strip off the tattered outer leaves), microwave for 3 minutes. Easy-peasy lemon squeezy.
Can eat hot with salt only (or with butter!), or scrape off kernels to add to soup or salad. Food of the gods!
I'd cut the kernels off the cobb, char them in a cast iron skillet, and mix with diced bell peppers, lime, orange, chili powder and maybe black beans, maybe some salsa. Serve over lettuce with some tortilla chips.
^^^ Yep. That's what I'm talking about. Right down to the cast-iron skillet. π
@stueytheround I usually only boil the corn. π€ Or given that it's one ear, what if you scrape the kernels off raw, then sautΓ© them in a little oil so they get a little caramelized on the outside, add salt of course, and then use that as a topping for a tex-mex salad? Or tex-mex beans? Pinto beans with roasty corn and salsa is yum.
