i've recently started making a chopped garlic, olive oil, and lemon juice topping over egg noodles with steamed spinach.

all the Indian recipes for using chickpea flour add a bit of lemon juice to make the texture fluffier. just discovered that recently. it's terrific.

i made some yesterday, changed up by using ⅓ chickpea flour along with ⅔ cornmeal and the rest, corn, cheese, and stirring in a couple teaspoons or so of lemon juice just before pouring it into the pan makes it fluffier.
