Years ago, I read the advice that everyone should have three dishes that they can cook with confidence. Even if your in-laws showed up unexpectedly, you know you could make this meal and it'd be a success.

I'm not positive what all of the recipes would be on my list, but I'm sure that this is one of them.

I like this one as one of my three, but then half my family turned vegetarian, so I don't get much call to make it.

Absolutely use the white vermouth when you make it. And serve with an excellent white Bordeau.

@estherschindler i can make chicken/prawn/or lamb curry, dahl, & basmati rice. a bunch of veggie curries. mac & cheese. a tortellini & italian sausage soup. everything else is highly variable since i don't have a recipe book except for baking. and b/c i don't make them often enough, quantities change...a lot!

I've got a signature black bean and corn salad that is pretty remarkable for something relatively simple.

My vegan chili would be one of my core dishes, too. (Not so simple.)

And a smoky carrot dip that also works as a dressing with a bit of sherry vinegar added.

Though I'm also a seat-of-the-pants cook who is compulsive about keeping a well stocked pantry--so making something for company is never an issue.

Oooh, that looks simple and delicious! Ina Garten knows her stuff. I will try this one.

@estherschindler i was just writing about this - mine would be poached whole salmon and chocolate cheesecake. i know that's only two but its a start!
