I'm still adjusting to baking at this higher elevation...Where we were, where @MrsE0113 is, is about 10ft about sea level...We're higher now (most days I can say that, literally and figuratively, and spiritually)....
Baked banana bread today and it almost has the consistency of moist cornbread.
I'll figure it out as I taste test the near-misses...
