First, any trip to Philly if you're looking for good food needs to start at Reading Terminal Market. There you will find the actual best sandwich in town (some awards reading orgs say best in the country): DiNic's roast pork. I recommend ordering it with sauteed broccoli rabe or spinach with provolone, and ask for it extra wet.

If you truly want the best cheesesteak, you have to go up to Henry Ave in Roxborough for D'Allesandro's. It's far away but worth it. But honestly if you get the pork sandwich at DiNic's You've already had the "real" Philly sandwich.
AVOID Pat's and Geno's. They are probably the worst steaks in town and tourist traps. But the Italian Market otherwise has amazing food.

For tremendously good pasta and Italian food in general, go to Osteria owned by Marc Vetri. His flagship restaurant Vetri I've never been to; it's extremely expensive.
If you want great pizza, go to Lorenzo's on South St. Huge slices. Or for brick oven, Pietro's (multiple locations).
Beau Monde is an excellent creperie.

Check out any places owned by Michael Solomonov for fantastic Jewish food the best hummus you'll ever have in your life. Zahav is the flagship in Old City but good luck getting in after they've won multiple James Beard awards. You can try Deizingoff or Lazar Wolf.
He also owns Federal Donuts (a couple locations). The donuts are unremarkable but the fried chicken is Korean style twice fried and amazing - that's what you go there for.
