I love and make a good potato soup, but would like to not have the carbs. Love all things cauliflower. Looks good.
@CinnamonGirlE I literally swap it pound for pound. It's been a favourite since I discovered it through weightwatchers years ago.
@CinnamonGirlE and it works equally well with vegetable stock for those times when you're feeding veggie/vegan friends. Just swap out butter for vegetable fat when sweating the leeks.

It's an old-fashioned term and is generally equivalent to 2-3 tablespoons or 20-30grams. It is intentionally imprecise, so you have wiggle room.
