@Kirrilyfred You can always add more starter than called for if you want things to rise a little faster in cold weather -- it makes it less "sour" because it speeds up the fermentation process.

I highly recommend the sourdough recipes of all kinds on Alexandra's Kitchen -- she simplifies the science and makes it a lot more user-friendly. People rave about my bread from her recipes!

@Kirrilyfred NAAAAH... take some of the rye starter out and feed it twice with white flour, poof, new starter.

I won't remember to tell you, TBH.

But I do know THIS recipe does a pretty darn good version -- I just want to see how Alex's turns out because I like her other breads. Why not try each yourself? Easy to make pizza dough. (I only make a half batch though.)

@RobAdamsFL I'm a Canadian. Know how long of a campaign we get for our federal election? 30-50 days, max. We talk about elections for a couple months, usually!

Drives me insane to follow your news. I mean, my god, they've been writing about whether Biden will run in 2024 since early 2021! Makes my head explode. Sigh.

@NaomiSkarzinski OMG, it's a total Sicilian thing. A few ways to do it -- as mentioned, with shaved red onion, olive oil, fresh mozza, rosemary.

But also -- ricotta, thin leek, pancetta, pistachio, salt, fresh mozza

And in Bulgaria I had an amazing Sicilian dude's pizza with italian sausage, ricotta cream base, mozza, and pistachios.

I also use walnuts just because they're cheaper. Nuts are authentic on Italian pizzas -- we just don't do it a lot here. :)

Making pizza tonight.

Pizza night!

This is the recipe I'm using -- a new one to me, but it's the same place that makes my basic sourdough and focaccia, so I have faith.

I'll be using a combo of toppings I saw on @Netflix's -- sliced red onion, pistachio. rosemary, olive oil, cheese, salt and nothing else. It's amazeballs.

@Jacki Yeah, no... it'll take a long time to stabilize here. Expect problems for weeks or more, intermittently.

@Jacki just relax. The site is crashing nonstop because of so many new people. It’s going to be fucked intermittently for weeks. If it’s not working, it’s not working. It will eventually.

It’s a weather migraine rainforest m night. The downpour is in about the 12th hour now. I’m enjoying it but my body hates it. Such is life I the rainforest of the rain coast.

The storm foretold by this morning’s red sunrise is now upon us.

Coastal BC’s Harbour Air Seaplanes gets you to some stunning places along the BC Coast. Everyone should have the experience of a seaplane flight at least once in their lifetime. It’s pretty neat.

But maybe not on a stormy day like today. :)

@eolai I didn’t visit that! Oh gosh. But yeah, amazing little place. :) I’m sure it has better restaurants now but that’s probably the only real change!

Back when I was playing nomad for a few years, I stayed in great places. I had just started a 3-week stay in a small town calls Cesky Krumlov in the Czech Republic six years ago this week. It was a moody beautiful little town that swarmed with daytrippers until 5 then emptied out for the evenings until noon.

Don’t just day trip. Stay the night in such places. It changes when everyone gets back on the tour bus.

@pennydaflos well, ctv.ca etc, I mean — a t.co link is Twitter,l.

@Ideajuice yeah, me too. I make a lot of air fryer “fried chicken” and save my bones for small batches when I know it’s just me eating it.
