Tonight's dinner
tomato sause, italian sausage, onions, roma tomatoes, roasted garlic, refried beans, Mexican Oregano, Mozzarella, Asiago

Planning on making some hazelnut lime curd tarts. Crust will be roasted ground Hazlenuts (Filberts), filling lime curd - topped with whipped cream and if I get around to it some candied lime zest

That there πŸ‘‡ is the reason I never order/buy commercial pizzas.

Roasted garlic, red pepper, white onion, ham, Italian sausages, mushrooms, mozzarella, Mexican oregano, roasted squash. My Ninja Foodi was perfect for roasting both the butternut squash and the garlic.

The start of today's kitchen adventure.

The tart shells, made with finely ground raw almonds, will be filled with home made lemon curd, topped with raspberry (from garden) glaze and, if I have the energy, merengue (gotta do something with the 4 egg whites :) ) sugar substitutes used - stevia in the dough and monk fruit in the curd

I should have used straight almond flour but far too expensive.

Dinner tonight. I make some odd pizzas 🀣 yellow tomato sauce & tomatoes, Calabrese sausage, refried beans, pesto, 4 different Italian cheeses (Pecorino, Provolone Piquante, Asiago, Romano)

Today's baking - 2 loaves of 100% WW bread and a cinnamon, banana, blueberry (from my garden), WW bread pudding.

So I grew a bunch of yellow cherry tomatoes this year and decided I would turn them into tomato sauce because why not :) Tonight's dinner was Fettuccine with this sauce and chopped Mammoth Basil and lemon zest.

Breakfast this morning; homemade spaghetti sauce under the poached eggs - homemade whole wheat/oatmeal/rye bread, dried French tarragon from my garden on the eggs, pan roasted baby potatoes, broccoli. Cheese is a Paderno/Romano mix

The older I get the less energy I have for cooking and baking, or by the time I get energy back after a walk it's too late to get involved in making bread.

Last night I said to myself time to get back to basics and do mis en place the day before so as to lessen the time needed the next day.

So last night I made the dough for home made pasta, and then put it in the fridge, then measured out all the dry ingredients and liquids for bread so all I kneaded (pun) to do today was combine

I love to cook and have some training in it. Here's a video I just did showing how to make real poached eggs (in water) youtu.be/Rj4IkyKFftI sorry about the noise still have to figure out my editor.
