Yum.
My grandma used to make Chow Chow, and it was all cabbage, green peppers, and green tomatoes -- plus a few other odds and ends she'd pick from the garden before the first frost. It was/is very sweet and tangy, and we'd eat it as a topping for collard greens. Still do, when I have a chance.
Your chow chow appears to have beans and carrots in it, which is a little different.

I think it must be a way to preserve produce in the fall that would otherwise freeze? 🤔 We always only used cabbage, green tomatoes (never red!) and bell peppers and it was always right before it got cold. Which, who knows when that will even be these days.
But I suppose that could apply to any produce. Like Italian giadinaria.
