I like it now and then.
It's really good in budae jjigae, where the fattiness is cut with the sharpness of the kim chi. Budae jjigae is weird and utterly delicious.
That seems like a Korean version of chanko-nabe.
It's more of a struggle stew... with small amounts of things people could get from the U.S. army base store. Thus--spam, vienna sausages, baked beans, american cheese... mixed with kim chi and other cheap Korean ingredients.
Chanko is, in large part, a "what's in the fridge", make-it-up-as-you-go kind of deal.
There's no "recipe" for chanko, just "this is how I made it today".
It's true (and hilarious) that one doesn't ever put beef or pork bones into chanko broth because cows and pigs are four-legged animals, and if you touch the ground with more than your feet in sumΕ, you lose.
That's wonderful.

@tyghebright I haven't made this yet, but it is close to the top of my list of korean dishes to make. I can see it providing a nice contrast in that.
