I made chicken ramen, but Mexican taco chicken ramen.
Onion, corn, beans, salsa, sour cream, guacamole, smokey chipotle in adobo sauce, sprinkle of nacho cheese, and shredded chicken.
@Fiikus_goddess it really hit the spot. Just enough heat from the Chipotles that you knew it was there, but didn't overwhelm. It all blended pretty nicely.

Honestly I am kinda jelly about taco ramen.
The chicken ramen was really good too. The simmering of the aromatics for an hour before adding the chicken really paid off.
