Vintage cheddar for flavour and fresh mozzarella for texture. Add chopped chives.

@GaryPoole Lots is my answer. And buttered bread, none of that mayonnaise on t he outside. (I tried it reading people extolling the virtues amd superiority to butter. Negative. Not the same taste.)
I like very sharp cheddar but anything will do in a pinch.
Completely agree. Sure, the mayo gives a nice even browning... but it doesn't *taste* as lovely as butter.
Cheddar, possibly with a slice of fresh tomato.
My fav. Also love to add fresh baby spinach
I like american and gouda, but sometimes I really just want brie with either fig jam or pear slices.

i would have said cheddar.
i mean the answer is ALMOST ALWAYS cheddar (to all important questions).
but on vacation i had one with Camembert and OHMYGOD!!!
Gouda with bacon for the win.
