Pineapple ferments well.

I love Tepache, which isn't really booze. It's about as alcoholic as kombucha (around 2%). But since I discovered it, it's my favorite refreshing beverage.
This is my favorite brand. More pineapple-y than others I've tried.

Not too spicy, just a nice hint on the front of the tongue, so still refreshing.
@Kurtroedeger I'm a big fan of chili with tropical fruit in general, but I've never had it as a drink. I'm going to see what they have at my local international supermarket. If not, I will have to find a way to make an approximation.

There are instructions online for making tepache. It's basically fermenting the skin and core from a pineapple and adding whatever other spices and fruits you want.
This brand tastes a little more distinctly pineapple-y than some others I've tried. I suspect they either include more pineapple in the ferment, or add a touch of juice after.
