Ok coso, do you ever put cheese on crackers and give them a little melt in the microwave?
I'm seeking to see if this is a regional thing.
The point is melty so that is very valid.
I use whatever is on hand. Cheddar, Colby, provolone, havarti, jack.
If I'm buying cheese to make it, then it's usually pepper jack for a little spice

Have you ever cooked corn in mayonnaise, mixed in mozzarella cheese, and stuffed the entire thing in the oven to brown?
It's pretty good.

@LadyZurk @Kurtroedeger Never occurred to me to do so. But then, I only have crackers if I've had company. I tend to eat my cheese straight up, but have been known to dip it in salsa or top it with jam.
