Some people will say it's everything but the oink, really though, it's trimming pieces when making regular cuts. The scraps. +Cornmeal and seasonings. All pureed together, then steamed into loaves.
@Kurtroedeger I seriously love it! We have a restaurant St. Petersburg called Skyway Jack's that makes it. I always order it when I go. The waitress asked if I was from PA, "nope, I just really like scrapple!"
