Someone was trying to tell me today that mozzarella cheese was a better choice for a grilled cheese sandwich than cheddar or American.
Don’t worry, I think he’ll be quite safe once the angry mob carrying pitchforks and torches have securely locked him in the nearest isolated tower for his own protection.
I like the classics -- cheddar, American cheese -- but I also really like Havarti with a bit of dill.

your definition of 'classic' might be a little rigid too. Classic cars are 20th century. Classic rock is too. you might be thinking of 'classical'.
@IanG_Richardson @GaryPoole sounds about right. i reject American cheese on principle, even on grilled cheese. I mean, that's the only place it's passable, but so many other cheeses can elevate the gc sammich to sublime levels of deliciousness. My favorite right now is a truffled white cheese that tends to crumble a bit + mozzarella for consistency. But the bread must be seedy --no white bread. I am fancy.
@IanG_Richardson @GaryPoole oh that sounds amazing in a gc. i've probably had that combo in a tomato pie-- I tend to just grab whatever cheeses I have on hand to layer in between sliced tomatoes, baked in a pie crust. bleu always adds a nice depth to the flavor *chef's kiss*
@IanG_Richardson My wife hates goat cheese. She says it tastes like a goat smells. 😂
