Made these puffy warm slightly sweet bao filled with tender chunks of pork belly simmered in my home made smoky hot blackberry molasses bbq sauce. Epic! :D

@voltronic a couple people asked, so lucky for you :D
Mix 1/3 cups of water, a pinch of sugar and 1/2 pkg dry yeast together in a bowl, stir well and set aside for 5 minutes.
2. In a big bowl (I used my mixer with the dough hook) mix 3 cups bread flour, 1/4 ish cup sugar and 1 tsp baking soda. Add yeast water slowly while stirring to combine. and continue to add 1/2 cup water, 1/2 cup cream and 1.5 tbsp oil (in that order) slowly and mix well you want to form a tacky but not sticky dough.

3. Dust flour on countertop and form it into a ball, cover with damp towel at room temperature for 1 hour.
4. Line parchment paper on steamer
5. Pull and roll the dough into a long log, evenly cut into 16 pieces or so, I did 10 for these, but they're monsters
6. steam for 20 minutes

@voltronic also I used fresh ground sea salt to taste, you know the balance
