Considering making a focaccia with veg instead of dressing and rolls. Kill one bird kind of thing
Have to make:
Vegan roast
Find good Brussels sprouts
Make scalloped Japanese sweet potatoes
Gravy
i forgot to order my tofurkey roast
I just decided to forgo a "main" this year. It's just me, and I always make WAY too much food.
I also don't try to make it all for Thursday, but extend the cooking over the weekend. (Typically, the dessert happens on Saturday.)
This year, I'm making stuffing w/ leeks and chestnuts; a "stuffed mushroom" casserole w/ vegan sausage; mashed potatoes; braised cabbage w/ apples; and a ginger-pear-galette w/ cranberry glaze.

I made a batch of 100 regular & 10 vegan holiday pasteles with my primas last weekend. This weekend its arroz con gandules in batches, arroz con dulce, coquito y flan.
I order a piece of lechon for my son mid December con chicharon because i have my limits on touching meat. making chicken for him Im ok with but everything else he makes it except lechon. that takes patience & skill.
I was inspired by people talking about how terrible green bean casserole is. And I like to have a mushroom dish at Thanksgiving.
So I'm thinking mushrooms, spinach, vegan bratwurst, wheat berries, homemade mushroom soup with vegan sour cream, and topped with fried onions.

@tyghebright @Bliss Do know that this is for an omnivore, a vegan, and me, an in between. No one else is getting any, we have no friends, family, acquaintances. We eat like pigs, leftovers to fridge and freezer. We will be eating from this till Xmas when we do it all over again but with lechΓ³n, pasteles, arroz con gandules
