We ran out of Arborio rice so I'm making a mushroom risotto with sushi rice instead.
So far, seems to be working. No change in method needed.

Any short-grain starchy rice will work!

And then, there's farroto, which I love in cooler weather... using farro as you would rice. Best with pearled farro, but you can do it with regular farro--it just takes a long time.
