We don't use it. We don't feel confident the person providing the service gets all of it

I don't think so. Tipping long precedes plastic/tech payment. It's one of the oldest excuses in the world for paying people less than they're worth. "Oh it's okay, she gets tips!"
I'm as complicit as anyone in the move away from cash for most things. But tips are largely given to people in jobs where they can work their asses off for less than minimum wage. Some do great and some can only hope to make the rent. It's just wrong
