Two weeks post op from gallbladder removal and I'm supposed to be on a low fat diet for a bit. I keep seeing all of these pictures of food that I would so love to have

@sistersib 1 large shallot, 1.5 cups carrots, 1 large container sliced baby portobello mushrooms and a handful of kale. Food processor until very fine. Into the frying pan with a little butter, olive oil, Tony Chachare's. Add a splash of white wine and fry until all the moisture is mostly gone.

Remove and set aside. Oil back into the pan, add some beaten eggs for an omelet. Add your cheese of choice and that glorious mushroom mixture. Enjoy.
