I'm likely missing something critical, here: Why don't we have 2-3 weeks of early and mail voting and have the tallies posted as they come in? The way it's done now is like watching a soccer game on TV but with all shots on goal clipped out until the end, and then they announce the score and show clips of the goals being scored. Why should the results of the elections be kept secret until all votes are cast? Would it help to increase confidence and maybe even influence more folks to participate?

I have two answers: factual and emotional. Both are true. Factual: because organizing and running elections is a right reserved to the individual states, they decide which types of votes are counted when. Consequently, some states start counting early and mail ballots only after all of the day of ballots are counted, and some start counting them at start of election day. Nobody counts them as they come in. Emotional: this is a fucking R ploy to create a Red Mirage.

Professional: What would increase confidence if all states had ballot tracking and you could look up what happens to your vote and when. Some states do not have ballot tracking - including MO where I live. Emotional but also fact: lots of folks have been tracking their ballots and know that their vote was not counted.
