I can't adequately express with words how happy I am to be able to eat salads again - daily. Almost every day for over two weeks. I leave out the cucumbers and the onions, but white beans, avocado, lettuce, tomato, mushroom, blue cheese, mozzarella, homemade dressing...all of the things. My body has finally adjusted to tolerating insoluble fiber. Nom, nom.
