This chipotle shrimp taco recipe is quick and easy and likely uses ingredients you have in your kitchen already. Didn’t thaw the frozen shrimp? Polenta is grits’ fancy relative. This version combines the creaminess of the corn grits with the nutty, salty flavor of Parmigiano. While it makes for a great side dish for any meal, the leftovers can be fried and served with a marinara sauce for an Italian dinner.

Pork can be a tricky meat to cook. Today’s pork is so lean and can dry out quickly if you don’t give them some help. Pounding down the thickness means quicker cook times, and a crunchy coating helps keep the chop stay moist.
