This turned out amazing. Spatchcock chicken with a head of garlic, lemon, rosemary and thyme, salt and pepper. Browned in the cast iron pan, then roasted at 400F until breast reaches 155F.
So much flavor, so simple!
@InUnfunky Yes. For this prep, you cook it to 155, remove from oven, leave it in the cast iron pan for 10 minutes, and the temp rises to 165+. It was fully probed and monitored.
