I gave up beef & pork years ago. I still eat dairy (mainly yogurt and milk) but as you'll see, dairy production is far less damaging to the environment than beef production.

Yes, I hope people will discover the very, very many delicious dishes we can make that don't require including body parts of a dead cow in the ingredients.

@gemswinc I spent some time in China. They eat dogs there although this practice is dying out because individual wealth has increased and now people have dogs for pets, not food. In fact, there's an active "don't eat dogs movement."

I began thinking about cows and pigs and dogs in the same category. I won't eat any of them.

@gemswinc China experienced a great famine between 1958-1962, said to be the worst in human history. Estimates are that up to 43 million starved to death. The generations affected are equivalent to our Boomers and Gen Z.

It doesn't surprise me that the Chinese tour participants will eat...or at least try...anything.

@gemswinc Same with my parents - constant anxiety from the Great Depression conditions. They had a class approach (my view of class) in that they sought greater income, purchased "quality" items, all with the goal of impressing others. They did not want to be seen as the typical Depression refugees. They wanted their daughters to do even better: high status profession, more money, a "good marriage."

What they got in me was a feminist, anti-war socialist hippie.
