After looking for easy, one skillet recipes that make good leftovers, I’m trying a creamy beef and shells recipe today. (Brown rice gluten free shells):

I have a gluten allergy but not Celiac disease. However, I do have one of the two genetic marker’s for Celiac’s disease as well as lots of family members who suffer from it. My doctor told me to cut gluten a few years ago and I feel much better for doing so.
I see. Glad to know you're doing better!
The doctor said because of my genetic variant, I have a 20% chance of developing Celiac’s if I continue to eat gluten. Since Celiacs is an autoimmune disease, that’s a big “no thanks”. Once you have one autoimmune disease, the chances of developing another one, like rheumatoid arthritis or Hashimoto’s disease increases. One of my relatives developed Hashimoto’s by the time she was diagnosed with Celiac’s.
@evamarie This is quite good as well, if you like Mexican flavors, and has the benefit of being mostly pantry items (except for the cheese and sour cream) as well as very affordable:

Are you or your husband celiac sufferers? I ask because you have posted gluten-free recipes before, so I was wondering, of course.
