9to5Google managed to activate the "Help me create a list" feature in the latest Google Keep release for Android (v5.23.462.05.90).

The feature will seemingly be a part of Workspace Labs, as the popup appeared once the team forcibly enabled the AI feature

Interestingly, Google isn’t offering Workspace administrators any control over the new Enhanced Smart Fill feature. This means you can start using it as soon as it is available for your account, without requesting IT to enable it first. The feature is already rolling out for Enterprise customers who have the Duet AI add-on.
If you don't know what Duet AI is for workspace here's a explanation

@ecksmc I generally hate the Gmail features. The only one of those I use is the quick response.
I teach high school. Some students struggle to spell. They don't know the capitalization and punctuation rules either.
When these automatic features were added to Microsoft Word students became reliant on them. I see the same thing happening here. People will no longer be able to organize a spreadsheet themselves, write a letter, etc.
When things get too easy, people get lazy. We need to struggle.
personally
i ain't a fan of google apps, services, with AI
when the GBoard app showed an AI option

i switched to another keyboard app >> OpenBoard is a 100% foss keyboard based on AOSP, with no dependency on Google binaries, that respects your privacy.

i'll more than likely ditch google keep also once the AI feature rolls out
