after playing around with a few Open Source Keyboards on Android, because GBoard is injecting AI into it which is already in the beta version of the app, i'd defo suggest OpenBoard

honestly it's not far off the same as GBoard minus a few features

OpenBoard has a clipboard feature also which allows for pinning by long pressing the entry

doesn't use any background data whatsoever or needs any permissions unlike GBoard
