I think the tamales (round 2.5) are done. Should be a lot more flavorful this time.

New tuners and strings on the ol' agnostic guitar. Still likely to have some intonation issues but what can you do?

Masa is mixed. Tomorrow is going to be the second time I have ever made tamales and let me tell you, the first batch left a lot to be desired.

Pork roast is finished. Bones and scraps are back in the crock pot with some leftover chicken legs, making a nice rich stock. Onions and peppers combined with a can of chipotles and pureed. Reserved pork and beef fat at the ready.

These tamales are going to be the SHIT.

Counting down to pizza day on Saturday. Started the dough- 7.5 pounds of it!- and finished the ingredient acquisition. Probably going to have to adjust the hydration later. Put some chicken in a mix of herbs, olive oil, minced onion, garlic paste, lemon zest, pepper and lemon juice. Oh and some very concentrated broth.

Tomorrow is going to involve a lot of prep work. Cutting veg, shredding cheese, prepping the dough, very gently baking the chicken, and whatever other tasks arise.

French toast. Half and half, vanilla, a bit of cinnamon, nutmeg, eggs and some syrup. Very nutmeg forward.
