What I do
Clean all stems, core strawberries.
Pick them clean.
Wash is cool water. Most important dry them thoroughly. Arrange on a large baking sheet one layer, only, on parchment or wax paper. place in freezer for a couple of hours. Remove and pack them in an air tight container, fill it up to minimize the air in the container. Put back in freezer.

Well 18 lbs of berries frozen, strawberries, blackberries, raspberries, boysenberries, blueberry, all the berries. Now this is not just for me. We share around here. But man that a lot of work. Had help, but the shared freezers are not in the house but out in the "well house", about 75 meters from my door.
We might need to buy another. We favor old chest freezers. For their reliability. In the summer they are mostly solar. Mains in winter.
Oh, the abundance of late summer :--)
So, all these berries are for winter smoothies, berry liquor?, berry pies ?

My neighbors do something magical with blackberry syrup and brandy... I don't drink, but everyone raves about it.
