Easy dinner: 1 onion sliced/chopped/whatever, garlic, red pepper flake, 1lb of ground beef or Turkey or whatever, 1 large or up to 3 small zucchinis sliced and/or quartered, and a jar of your favorite marinara or a 28oz can of tomato purée.
I added some fresh spinach we had in the fridge.
I add fresh baby spinach to as many dishes as possible. It wilts down in couple minutes. Add to scrambled eggs, spaghetti, mac & cheese, grilled cheese sandwiches, potato pirogies etc.

@annamuneca Simple (although not very quick-cooking) dinner for one: Rice, chickpeas, canned diced tomatoes.
Assuming you've soaked your chickpeas already, here's what you do: Simmer the chickpeas for a while with a bit of baking soda until tender, strain, place in a bowl. Boil water. Add rice. Wait for rice to be cooked. Add chickpeas, tomatoes, and spices/herbs of your choice to the pot of cooked rice. Eat directly out of the pot.
