Chicken enchiladas for dinner tonight.
The wind is fierce. Was almost blown over a few times and there’s a lot of ice everywhere. -29F windchill is gross. Now that we’re home I’m not going anywhere.

Here’s the recipe from what I remember doing. We used a beef barbacoa taco seasoning packet and it was pretty tasty. I dislike how some enchiladas have rice in them as filler and since I don’t eat rice I enjoyed making these.
