@NaomiSkarzinski According to that old Alton Brown video, and I wish I could find it, it's the rounded vs pointed shapes. Supposedly the rounded with a large air pocket behind the blades allows for great emulsification. But that video was also over a decade old.

It looks like most review places test for mayo making, now. So if the reviews are good on making mayos, trust that.
