8 years ago, this little bundle of absolute chaos came into our lives, and has provided a guiding light through some of my darkest hours of my life. Happy Birthday, little Timothy. Your daddy and I are so very proud of you kiddo. (And yes, he said it was okay for me to share his baby picture.)

Oreo cupcakes with coconut vanilla icing. (It's delicious, and the cupcakes are soooo moist!) The icing was homemade, I couldn't find the stuff that hubs had in the fridge, so I whipped up a batch from coconut oil, vanilla extract, and powdered sugar.

As for the icing recipe.
Ingredients:
Coconut oil (Softened, not hard, or melted)
Vanilla extract
Powdered sugar
With a machine mixer, add about a teaspoon of extract to three to four tablespoons of coconut oil in the mixing bowl and set it to whip. Add slowly powdered sugar straight in, it WILL get thicker, but if it's TOO thick, add a bit of filtered water, spoonfuls at a time, to help smooth it out. The right consistency your looking for is about the same you get from sweet condensed milk.1/2

This icing sets VERY quickly on cooled treats, and it's perfect for drizzles over cookies, cupcakes, or donuts. The taste is almost silky with the way it melts to the tongue and the flavor is just decadent. 2/2 (It should be a sin to be as delicious as it is.)
