This evening, flaky pastry gets made and will go into the fridge with the sweet shortcrust, it's brother from another mother.

Tomorrow, the flaky becomes a pumpkin cheesecake pie, and the sweet shortcrust will become a cranberry chiffon. I will also start a pre-ferment of roll dough so that they can happen early Thursday morning.

@Moxitude Both pies are from King Arthur, but using different crusts because I'm a rebel. Let me know if you want links and I'll dig them up for you. 😊

And here's the cranberry chiffon, which IMO, is really the only way to have cranberry. It's very light, and I'm excited to see how it does with a sweet crust (last year I did basic flaky).
