This evening, flaky pastry gets made and will go into the fridge with the sweet shortcrust, it's brother from another mother.
Tomorrow, the flaky becomes a pumpkin cheesecake pie, and the sweet shortcrust will become a cranberry chiffon. I will also start a pre-ferment of roll dough so that they can happen early Thursday morning. #Thanksgiving

Alright, so the pumpkin cheesecake is a new one for me, but it looks legit and I have yet to have them do me dirty (will update Thursday).

And here's the cranberry chiffon, which IMO, is really the only way to have cranberry. It's very light, and I'm excited to see how it does with a sweet crust (last year I did basic flaky).
