i learned that one way of tenderizing meat is to wrap it in papaya leaves. that way some even eat it otherwise uncooked.

@MLClark I haven't learned to enjoy it, but did learn the medicinal benefits of the seeds from the Tarahumara, for unmentionable gut problems. Keep some seeds around just in case.
