Hopefully a friend is going to bring us some of her homegrown beets a little later. I love beets and usually boil them but I remember you have one of your fits about that 😀. What is your recipe for roasting them.
This is true — I have fits when people boil yummy veggies. Yuck! 😂 Blanch then shock in an ice bath! 😎
Flory and ACG have the roasting recipes; usually I put ‘em in a salad with walnuts, goat or feta cheese, fresh mint, balsamic vinaigrette or reduction. Or fresh pickle as I did yesterday — peel and slice, heat your brine to a boil, then immerse. Let cool, eat. Snap! Yum. 👍
